Infused Cinnamon Apple Muffins

*The cannabutter we used for this recipe was made with the Sativa strain Dirty Taxi from Glorious Cannabis Co. at 31.62% THC.

Prep Time: 35 minutes | Cook Time: 25-30 minutes

Total Time: 65 minutes | Servings: 24

Muffin Ingredients

2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
2 teaspoons ground cinnamon
2 cups diced apples
½ cup cannabutter
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
½ cup milk

Topping Ingredients

½ cup cannabutter
¼ cup granulated sugar
¼ cup ground cinnamon

Instructions

  1. Preheat oven to 375° F. Insert muffin liners for easy removal.
  2. Sift together 2 cups flour, 1 ½ teaspoons baking powder, ½ teaspoon kosher salt, and 2 teaspoons cinnamon in a medium bowl. Set aside.
  3. Mix 2 teaspoons flour with ½ teaspoon cinnamon. Toss diced apples with the flour/cinnamon mixture to coat apples in a separate bowl. Set aside.
  4. Cream together butter and sugar until lightened in color. Add an egg, one at a time, making sure it’s fully incorporated in the mix before adding the other. Mix in 2 teaspoons vanilla extract.
  5. Gently alternate adding in the flour mixture that was set aside, and the ½ cup of milk (this makes the batter easier to mix). Stir until combined.
  6. Fold in diced apple and scoop mixture into prepared muffin tins, fulling about ⅔ to ¾ full. Bake about 30 minutes, or until a toothpick test in the middle comes out clean.
  7. While the muffins are baking, prepare the topping by melting ½ cup of butter and allowing it to cool slightly. Pour butter into a separate bowl easy for dipping the top of the muffins. In a separate bowl, mix ¼ cup of granulated sugar with ¼ cup of ground cinnamon and set aside.
  8. Once muffins are done, remove from the oven and allow them to cool in the muffin tin. Then as you’re removing each muffin, brush the butter on top with a pastry brush (or dip in the melted butter), and top the muffin with the cinnamon sugar mixture. Place onto a plate to finish cooling.

Infused Apple Butter

Prep Time: 20 minutes | Cook Time: 40 minutes

Total Time: 60 minutes | Servings: 20

Ingredients

3 lb. Granny Smith apples
¾ cup apple cider vinegar
½ teaspoon salt
1 cup water
1 cup packed light brown sugar
1 tablespoon apple pie spice or pumpkin pie spice
1 teaspoon vanilla extract
Cannabis tincture

Instructions

    1. Core and peel apples into wedges and place in a medium saucepot.
    2. Add ¾ cup of apple cider vinegar, ½ teaspoon of salt, and 1 cup of water to the saucepot.
    3. Set pot over medium heat. Cover, leaving a little space open for the pot to vent, and simmer for 20 to 30 minutes, stirring occasionally. Turn off the heat when the apples are extremely tender and most of the liquid has evaporated.
    4. Place the apple mash and liquid in a blender or food processor, pulverizing the apples into a fine sauce.
    5. Place apple sauce back into the original pot. Set back over medium heat and add 1 cup of packed light brown sugar, 1 teaspoon of apple pie spice or pumpkin pie spice, 1 teaspoon of vanilla extract, and your choice of cannabis tincture.
      1. For this batch, we used pumpkin pie spice with 3 mL of Gentle Drops from TreeWorks.
    6. Simmer, stirring every few minutes until the sauce thickens and turns dark brown, about 10-15 minutes.
    7. Cool, then store in the refrigerator.

Apple Butter can be used in place of apple sauce, as a toast spread, or on a sandwich!
